Cookie Dough Cheesecake

🍫🍪💖 Experience the dreamy delight of our Cookie Dough Cheesecake, featuring a scrumptious chocolate chip cookie base, topped with velvety cheesecake and chunks of cookie dough.

Ingredients:

Cookie Base:

1 log (450g) cookie dough, divided

Cheesecake:

3 blocks (750g) cream cheese, softened
1 cup (210g) caster sugar
1 tsp vanilla extract
1/2 tsp salt
1/4 cup (60ml) heavy cream
3 large eggs
3/4 cup (150g) mini chocolate chips, divided

Whipped Cream:

1 1/2 cups (375ml) heavy cream
1 tsp vanilla bean paste

Decorations:

4 chocolate chip cookies, halved
5 chocolate chip cookies, chopped

Directions:

Cookie Base: Preheat the oven to 170°C (325°F). Line an 8-inch springform pan with parchment paper. Press 3/4 of the cookie dough into the pan to form an even layer. Bake for 20 minutes; allow to cool.
Cheesecake: In a mixing bowl, beat cream cheese, sugar, vanilla, salt, and heavy cream until fluffy (about 3 minutes). Incorporate eggs one at a time. Fold in 1/2 cup of chocolate chips. Wrap the outside of the pan in foil, pour in half the cheesecake mixture, dot with remaining cookie dough, then top with the rest of the cheesecake mixture and sprinkle with additional chocolate chips. Bake in a water bath at the same temperature for 2 hours or until the center is slightly jiggly.
Whipped Cream: Whip the heavy cream with vanilla bean paste until stiff peaks form.
Decoration: Once cooled, loosen the cheesecake and transfer to a serving plate. Pipe whipped cream on top and decorate with halved and chopped cookies and chocolate chips.
